This is a one-pan dinner where the oven does the heavy lifting. Season the chicken confidently, roast hot, and the rendered fat becomes the sauce for everything on the pan. Asparagus cooks fast, so it joins late and finishes bright.

Method

  1. Rub the chicken thighs with 2 tablespoons olive oil. Season generously with 1 teaspoon salt and pepper on all sides.
  2. Carefully remove the hot sheet pan from the oven. Place the chicken thighs skin-side down in a single layer with space between each piece. Scatter rosemary sprigs around the thighs.
  3. Roast for 15 minutes until the skin releases easily from the pan and the edges begin to turn golden.
  4. Flip the thighs skin-side up. Push them to one side of the pan.
  5. Toss asparagus and smashed garlic with 1 tablespoon olive oil and a quarter teaspoon salt. Spread on the empty side of the pan in a single layer.
  6. Nestle the lemon halves cut-side down on the pan.
  7. Roast for 12 to 15 minutes until the chicken skin is deeply golden and crisp, and the asparagus is bright green with lightly charred tips.
  8. Remove from oven. Let the chicken rest on the pan for 3 to 4 minutes.
  9. Squeeze the roasted lemon halves over everything. Drizzle with 1 tablespoon olive oil.
  10. Taste the asparagus and adjust with salt if needed.

How to serve it

Transfer thighs to plates. Pile asparagus alongside. Spoon any pan juices over the chicken. Scatter roasted garlic cloves on top. Finish with flaky salt.
