The one bright plate of the week. Silky white beans, tender greens, a squeeze of lemon, and a crisp-skinned salmon fillet that stays crisp. Feels light and looks like a restaurant.

Smash a Third of the BeansSmash about a third of the cannellini right in the pan before the broth goes in. They melt and thicken the liquid into a silky, creamy sauce with no cream at all, and the beans left whole give it body. Then set the crisp fillet ON TOP so the skin never goes soft.
What actually matters here
- Dry the salmon skin hard so it crisps.
- Smash a third of the beans for the sauce.
- Salmon rides on top, never simmered under.
Ingredients
Serves 4.
Fish
- 4salmon fillets, skin on
- salt and pepper
Beans
- 2 canscannellini beans
- 1bunch Lacinato kale (or Swiss chard)
- 4garlic cloves
Broth
- 1 cupbroth
- 1lemon
- olive oil
- chili flakes
Before you start
- Pat the salmon completely dry, especially the skin, and season it (dry skin is the whole secret to crisping).
- Drain and rinse the beans.
- Strip the kale leaves from the stems and roughly chop them; mince the garlic.
Method
- Heat a little oil in a skillet over medium-high. Lay the salmon in skin-side down and press it flat for 10 seconds so it doesn't curl; cook without moving it 4 to 5 minutes until the skin is deep golden and releases easily, then flip and cook 2 minutes more. Move it to a plate, skin up.
- In the same pan, soften the garlic and chili flakes in a little oil for 30 seconds, then add the chopped kale and cook until wilted and tender, about 3 to 4 minutes.
- Add the beans and broth, then smash about a third of the beans against the pan with a spoon; simmer 4 to 5 minutes until the liquid turns silky and slightly thick.
- Squeeze in the lemon and season. Spoon the beans and greens into bowls and set the crisp salmon on top, skin up so it stays crisp.
How you know it is right
- The salmon skin is crisp and the flesh flakes at a gentle press, the beans creamy and brothy.
How to serve it
Crusty bread to mop the broth; extra lemon.
If you want it simpler
- Any firm white fish or shrimp; escarole or spinach for the kale; skip the skin and just sear the fillet.
Crisp the skin dry, smash a third of the beans, salmon on top. Creamy, bright, no cream.
