Real Roman Carbonara, No Cream
The crave pasta, and there is no cream in it. That silk is egg, cheese, and starchy pasta water. Crisp pancetta, a glossy egg-and-pecorino sauce, and a heavy hand with black pepper. It comes together in the time the pasta cooks, and it is pure comfort on a plate.

Off the HeatThe whole trick to carbonara is temperature. Toss the egg and cheese with the pasta off the heat, using the residual warmth and a splash of pasta water to melt it into a glossy sauce. Too hot and you get scrambled eggs; do it right and it is silky and rich with no cream anywhere.

Ingredients
Serves 4.
Pasta
- 1 lbspaghetti or rigatoni
- 6 ozpancetta or guanciale, diced
- 1 tbspolive oil
Sauce
- 4egg yolks
- 2whole eggs
- 1 1/2 cupspecorino romano, grated
- 2 tspcoarse black pepper
To Finish
- extra pecorino and black pepper
Before you start
- Bring a big pot of salted water to a boil.
- Whisk the yolks, whole eggs, pecorino, and black pepper in a bowl.
- Dice the pancetta.
Method
- Crisp the pancetta in olive oil over medium heat until golden; leave the fat in the pan.
- Cook the pasta until al dente, saving a mug of the water.
- Add the hot drained pasta to the pancetta pan off the heat and toss.
- Pour in the egg-and-cheese mixture, tossing fast, adding pasta water a splash at a time until glossy.
- Keep tossing until the sauce coats every strand and turns silky.
- Serve right away with more pecorino and a lot of black pepper.

- The sauce is glossy and clings to the pasta, never scrambled.
- The pancetta is crisp and golden.
- It is peppery and rich.
- No cream in sight, just egg and cheese silk.
How to serve it
Serve immediately; carbonara waits for no one. A sharp green salad is the perfect foil.
If you want it simpler
- Bacon stands in for pancetta if that is what you have.
- Parmesan works if you cannot find pecorino, though pecorino is the classic.
Crisp the pancetta, toss the egg off the heat, and let the pasta water make it silk.
