Fig and Balsamic Pork Chops with White Beans

Ingredients
Serves 4.
Pork
- 4bone-in pork chops (1-inch thick)
- 1 tbspolive oil
- salt and pepper
Fig-Balsamic Glaze
- 6fresh figs, halved (or 3 tbsp fig jam)
- 3 tbspbalsamic vinegar
- 1/2 cupchicken stock
- 1 tbspbutter
- 1 sprigrosemary
White Beans
- 2 canscannellini beans, drained
- 2garlic cloves
- 2 tbspolive oil
- 1/2 cupstock or water
- salt
Broccolini
- 1 lbbroccolini
- 1 tbspolive oil
- 2garlic cloves
- pinch chili flakes
Before you start
- Pat the pork dry and season well; let it sit at room temperature.
- Halve the figs; drain the beans.
- Trim the broccolini.
Method
- Sear the pork in olive oil 3 to 4 minutes a side until golden and 140 degrees; rest on a plate.
- In the same pan, add the figs and balsamic; cook until the figs soften and the balsamic reduces.
- Add the stock and rosemary, reduce to a glaze, then swirl in the butter.
- Meanwhile, warm the beans with garlic, oil, and a splash of stock, mashing some for creaminess.
- Char the broccolini in a hot pan with oil, garlic, and chili until blistered and tender.
- Plate the beans, set the pork on top, spoon over the fig glaze, and serve the broccolini alongside.
How you know it is right
- The pork is golden outside and juicy, just past pink.
- The fig glaze is glossy and jammy.
- The white beans are creamy and soft.
- The broccolini is charred and a little bitter - the perfect balance.
How to serve it
Serve the chops over the creamy beans with the fig glaze spooned across and the broccolini alongside.
If you want it simpler
- Fig jam thinned with a splash of water stands in perfectly when fresh figs are gone.
- Boneless chops or pork tenderloin medallions work too - just watch the timing.
