Korean Beef Bowl with a Quick Cucumber Pickle
Better than takeout and faster. Thin-sliced beef in a sweet-savory sesame-soy glaze, seared hard and piled over rice with a quick cucumber pickle to cut the richness. Fifteen minutes of actual cooking and the bowl comes back empty every time.

Slice It Thin, Sear It HotFreeze the steak for twenty minutes and it slices paper-thin - thin enough to caramelize in seconds in a screaming pan. Thin and fast is the whole trick; a thick piece just steams in its own marinade.
What actually matters here
- Slice the beef as thin as you can - freeze it 20 minutes first to make it easy.
- Get the pan screaming hot and do not crowd it, or the beef steams instead of searing.
- The cucumber pickle is not a garnish - that cold crunch is what balances the sweet glaze.
Ingredients
Serves 4.
Beef
- 1 1/2 lbsirloin or ribeye, sliced thin
- 3 tbspsoy sauce
- 2 tbspbrown sugar
- 1 tbsptoasted sesame oil
- 3garlic cloves, minced
- 1 tbspgrated ginger
- 1Asian pear or apple, grated
- 2 tbspneutral oil
Cucumber Pickle
- 2Persian cucumbers, thin-sliced
- 2 tbsprice vinegar
- 1 tspsugar
- 1 tspsesame seeds
- pinch salt
To Serve
- cooked short-grain rice
- 4scallions, sliced
- toasted sesame seeds
Before you start
- Freeze the beef 20 minutes, then slice thin against the grain.
- Whisk the soy, brown sugar, sesame oil, garlic, ginger, and grated pear; toss with the beef.
- Quick-pickle the cucumbers in the vinegar, sugar, and salt; cook the rice.
Method
- Heat the oil in a large skillet or wok until screaming hot.
- Sear the beef in two batches, spread out, 2 to 3 minutes until caramelized at the edges.
- Return all the beef and toss 30 seconds to glaze.
- Spoon the rice into bowls.
- Pile the beef and any pan glaze over the top.
- Finish with the cucumber pickle, scallion, and sesame seeds.
How you know it is right
- The beef is caramelized, not gray or steamed.
- The glaze clings and shines.
- The cucumber is cold and sharp against the warm beef.
- The rice soaks up the last of the glaze.
How to serve it
Serve over short-grain rice with the cucumber pickle and extra scallion. Kimchi on the side if you have it.
If you want it simpler
- Pre-sliced beef for stir-fry or shabu-shabu skips the freezing and slicing.
- Skip the grated pear - a splash more brown sugar gets you close.
Slice it thin, sear it hot, glaze it fast, and cool it down with the cucumber.
