Mediterranean Chickpea Salad over Couscous

Season It TwiceChickpeas are bland straight from the can - dress them while everything else preps so they drink up the lemon and oil, then taste and salt again at the end. A salad this simple lives or dies on seasoning; do not be shy with the lemon, salt, and good oil.

Ingredients
Serves 4.
Salad
- 2 canschickpeas, drained
- 3Persian cucumbers, diced
- 1/2 cupKalamata olives, torn
- 1/2red onion, diced
- 1/2 cupparsley, chopped
- 1/4 cupmint, chopped
Lemon-Herb Dressing
- 1/3 cupolive oil
- 2lemons, juiced
- 1garlic clove, grated
- 1 tspdried oregano
- salt and pepper
To Serve
- 1 1/2 cupscouscous, cooked
- warm pita
Before you start
- Cook the couscous and fluff it; let it cool a little.
- Drain the chickpeas; dice the cucumber and onion.
- Whisk the lemon-herb dressing.
Method
- Toss the chickpeas with half the dressing and let them sit 10 minutes.
- Add the cucumber, olives, red onion, parsley, and mint.
- Pour over the rest of the dressing and toss.
- Taste and adjust with more lemon and salt.
- Spoon the couscous onto plates or a platter.
- Pile the salad over the top and serve with warm pita.
