Smash Burgers: The Chef's Method for a Real Crust
The burger every backyard wishes it could make. Two thin patties smashed on a screaming griddle until the edges go brown and lacy, American cheese melted into the beef, sweet griddled onions, sharp dill pickles, and a special sauce that pulls it together. The SmashPress the beef balls HARD onto a screaming-hot griddle for 30 seconds - that lacy crust is the whole point. Flip once, cheese on, done. Thin and crispy beats thick and gray every time.
What actually matters here
- Smash hard, flip once. A 30-second hard press on a hot griddle makes the lacy crust; pressing after the flip just squeezes the juice out.
- Thin patties, double them. Two thin smashed patties beat one thick one - more crust, more cheese contact.
- Don't skip the pickles. The acid is what keeps the burger from feeling heavy - they are not optional.
Ingredients
Serves 4.
Burgers
- 1 1/2 lbground beef (80/20), in 8 loose balls
- 8American cheese slices
- 4potato buns
- 2 tbspneutral oil or butter
- salt and pepper
Special Sauce
- 1/2 cupmayonnaise
- 2 tbspketchup
- 1 tbspyellow mustard
- 2 tbspminced dill pickle
- 1 tsppickle brine
To Build
- 1large onion, thinly sliced
- 16dill pickle chips
- shredded lettuce, optional
Before you start
- Whisk the special sauce and chill it.
- Form 8 loose 3-oz beef balls (do not pack them); thinly slice the onion.
- Toast the potato buns; get a griddle or cast iron screaming hot.
Method
- Lay a few onion slices where each patty will go, set a beef ball on top, and SMASH it flat with a spatula. Salt and pepper.
- Cook hard 2 to 3 minutes until the edges are lacy and brown, then flip once.
- Add cheese, melt 30 seconds, and stack two patties per burger.
- Spread special sauce on both bun halves.
- Build: bottom bun, double patty with onion, pickle chips, optional lettuce, top bun.
- Serve right away while it is crispy.
How you know it is right
- The patty edges are lacy, brown, and crispy - not gray.
- The cheese is fully melted into the beef.
- Pickles and sauce are both there (non-negotiable).
- It eats juicy with a crunch at the edge.
How to serve it
Serve immediately - smash burgers wait for no one. Great with chips or a quick slaw. Double the special sauce; everyone wants more.
If you want it simpler
- Bottled burger/special sauce works in a pinch - just stir in chopped pickle.
- Pre-sliced onion and a good store-bought potato bun keep this to 20 minutes.
Smash hard, melt the cheese, build with pickles. That is the burger.
