Za'atar Roasted Cauliflower with Tahini

Roast It HardCauliflower needs a hot oven and room on the pan to get deeply browned and crisp at the edges - crowd it and it steams. Those craggy roasted bits catch the za'atar and the tahini. This is the dish that converts cauliflower skeptics.
What actually matters here
- Cut the cauliflower into flat-sided steaks and florets so they get maximum browning.
- Roast hot (450) and do not crowd the pan.
- Thin the tahini with lemon and water to a drizzle; season it well.
Ingredients
Serves 4.
Cauliflower
- 2heads cauliflower, in florets and steaks
- 3 tbspolive oil
- 1 tbspza'atar
- 1 tspcumin
- salt
Lemony Tahini
- 1/3 cuptahini
- 1lemon, juiced
- 1garlic clove, grated
- 2 tbspwater
- salt
To Finish
- 1/2 cuppomegranate seeds
- 1/2 cupparsley and mint
- extra za'atar
Before you start
- Heat oven to 450 degrees.
- Cut the cauliflower; toss with oil, za'atar, cumin, and salt.
- Whisk the lemony tahini.
Method
- Spread the cauliflower on two sheet pans, not crowded.
- Roast 25 to 30 minutes, flipping once, until deeply browned and crisp.
- Pile onto a platter.
- Drizzle generously with lemony tahini.
- Scatter pomegranate and herbs.
- Finish with a dusting of za'atar.
